    Watermelon Mojito

    The weather is getting hotter, well at least, in some parts of the world. What better time to make this refreshing watermelon mojito. Especially when watermelons are in season and you want to take a break from simply eating them, this drink is a fantastic choice. Another great thing is that you can easily make this drink non-alcoholic by simply by leaving out the rum. Apart from looking amazing, it tastes great too.

    Mojitos are my go to cocktail and this watermelon mojito has defitnitely become one of my favourites. Other alcohol-inspired drinks you may enjoy are this boozy hot chocolate or soursop cocktail.

    If you prefer non-alcoholic options then sobolo, asaana, tangerine sugarcane, pineapple juice, soursop juice this passion-fruit hibiscus chiller, or this lemonade with lemongrass are great options to try.

    In this recipe, instead of using lime juice as you would in a regular mojito, I use lemon juice. In addition to that fresh mint leaves and rum are also necessry. Also, you will need some soda water or sparkling water as well as some sugar either in the form of simple syrup or granulated sugar.

    Instructions

    The first thing to do is to get the simple syrup ready so that it can cool down before it is used. For this simple syrup, some mint leaves are also added to get a nice minty flavour. Leave that to simmer and then cool.

    To get the juice out of the watermelon, simply pass the pieces of fruit through a sieve or a fine-mesh strainer. I find that this is the easiest way of getting the juice out. Alternatively, you can remove the seeds (if you aren't using seedless watermelons), cut the watermelon into smaller pieces and then blend the pieces. I just find the former method more convenient.

    Next cut the lemon and squeeze them through the sieve so that any seeds are caught. Then add the rum.

    Once the syrup is cool, pass that through the sieve as well and into a small bowl. Add the soda water, or sparkling water to the contents of the glass pitcher. At this point depending on how sweet your watermelons are, you will need adjust for sweetness and add the simple syrup.

    Variations

    • Watermelon mint juice - if you are not one for alcohol, you can easily turn this alcoholic mojito into a refreshing watermelon mint juice. In that case, omit the rum, the syrup, the lemon and the soda water. This is a great way to make two drinks out of one especially if you have guests coming over, a few of whom are not of drinking age yet or don't drink alcohol at all.
    • Non-alcoholic watermelon mojito - simply omit the rum and this is a great non-alcoholic cocktail.

    Tip

    • Add the soda water or sparkling water just before serving so you do not lose all of the fizz.
    • If you find that your watermelons are very sweet and you need very little of the minty simple syrup just add some more fresh mint leaves to the final mojito so that you don't miss out on that minty flavour.

    Ingredients

    • ½ large watermelon about 1 liter in juice
    • 3 shots light rum
    • mint simple syrup to taste
    • 6 fresh mint sprigs
    • 300 grams sugar
    • 3 large lemons
    • 300 miliitres soda water or sparkling water

    Instructions

    • Prepare a simple syrup by mixing sugar with an equal amount of water. Add the 3 of the mint sprigs and leave to simmer for about 10 minutes.
    • Cut watermelon into chunks and then juice the watermelon by passing the chunks through a sieve.
    • Cut the lemons into halves, squeeze and then add the juice to the watermelon juice.
    • Add the rum and the soda water and some crushed or muddled mint leaves. (from about 2 sprigs).
    • Add some of the simple syrup and taste. See notes 1.
    • Garnish with mint leaves and lemon wedges.

    Notes

    1. Because your watermelons can either be very sweet or just barely sweet, the simple syrup has to be added to taste. The sweeter your watermelon is, the less syrup you will need. In that case, add some more mint leaves to the final mojito.
