Passion fruit drinks are my favourite kind of drink. This passion fruit and hibiscus chiller is everything I love in a drink: some fizz, sweetness, and tartness. Passion fruits smell and taste amazing and can either have a purple or a yellow (sometimes mottled with a bit of green) outer covering. The tartness of the passion fruit blends so well with the simple syrup made from hibiscus leaves which are also a crucial part of this drink.

The hibiscus syrup used for this chiller is much lighter and not as thick as my original one. In order to get it this light, simply don't let it simmer that long or skip the corn starch. For the chiller, round it off with soda water or sparkling water or even just regular water and you have got the perfect combination to conquer the heat. If you're looking for more amazing drinks then have a go at this sprouted corn drink or this vitamin C-packed tangerine drink.

This chiller is quite sweet so, adding ice cubes is welcome to not only keep this drink cold but also to dilute it. Alternatively, you can reduce the amount of hibiscus syrup you add to the drink. If you have a sweetness that you want to stick with, then you could (ahead of time) freeze some fruit and then put that in your drink in place of ice cubes. I had some grapes which were incredibly sour and so they found their life's purpose in this fruit cooler. This drink can quickly be turned into a passion fruit cocktail by adding a liquor of your choice. Rum for instance is a fantastic choice but this refreshing drink is perfectly fine being non-alcoholic.

Passion Fruit & Hibiscus Chiller
Ingredients
- 2 large passion fruits About 60 ml of juice
- 80 ml hibiscus leaf syrup
- 300 ml soda water or sparkling water
- frozen grapes optional
- ice cubes
Instructions
- Cut passion fruit into half and scoop out pulp and seeds.
- Pass pulp and seeds through a sieve, adding a little bit of water to speed up the process.
- Add syrup, fruit juice and water into a glass and stir well.
- Add ice cubes or frozen fruit if desired.
Notes
- The ratio of syrup to passion fruit juice to water in this recipe will result in a chiller on the sweet side. If you want to reduce the sweetness, you can top up with more water or add more ice cubes to your drink.
- If the sweetness is just perfect for you and you want a cold drink that will not dilute as you drink, then you can add some frozen fruit, such as grapes.
- A shot of rum is great in this chiller and turns it into a great cocktail.
- If you are not a fan of soda water or sparkling water, then you can also use regular water.
- Adding the passion fruit seeds to the chiller is optional as not everyone is a fan of the crunchy seeds.
