    Mint Lemonade with Lemongrass

    It is hot and you want something other than water? A great way to get refreshed when it gets this hot and also get some vitamin C is with this mint lemonade with lemongrass.

    If you're like me and you love a sweet and sour combination, then this lemonade will make you happy. I love lemon ice cream, lemon sorbets, lemon cake... you get the picture.

    Rough lemons are abundant here and pretty affordable and so it makes sense to use them for this recipe. You can however use any lemons that are available or local to your area. The only thing you may want to adjust for those and is how much of the lemon juice you use.

    Alternatively, if lemonade isn't your thing, then this Tangerine, Pineapple and Sugarcane, Liha, Soursop juice or this very special Soursop cocktail are other drinks you can try.

    Ingredients

    You are going to need some lemons, lemongrass stalks, fresh mint leaves and of course a sweetnener like sugar or a simple syrup.

    I like the sourness and so the ratio of lemon juice to water in this recipe is perfect for me. The mint and lemongrass add an extra and yet subtle flavour to this simple lemonade.

    Instructions

    Squeeze the juice out of the lemons into a large jug or container. Crush the lemongrass stalks so that they release their flavour and then add the mint.

    You can either crush these or leave them whole, depending on how intense you want the mint flavour to be.

    That's how easy it is to make this lemonade. It's beautifully tangy with light hints of mint and lemongrass and ready to be chilled.

    Substitutions

    • Simple Syrup - instead of using granulated sugar to sweeten the lemonade, you can use a simple syrup. If you celebrate Halloween and you want a "bloody drink" for the kids then use this hibiscus syrup to add some colour to your lemonade.

    Ingredients

    • 250 millilitres lemon juice  rough lemons
    • 6 tablespoons white sugar heaped
    • 1000 millilitres water soda water or sparkling water
    • mint leaves approximately a handful, or 3 generous sprigs
    • 3 stalks lemongrass crushed

    Instructions

    • Squeeze lemons and strain out seeds and pulp.
    • Add sugar and stir well.
    • Add lemongrass stalk and mint to lemon juice and leave for about 10 minutes.
    • Add water to lemon juice and serve cold.

    Notes

    1. If you do not like your lemonade too sour, divide the amount of lemon juice in this recipe into two. Use one half of the lemon juice with all the water and taste. Add the other half of the lemon juice in bits (if necessary), until you are happy with the level of sourness.
    2. For an intense minty flavour, crush or muddle half of the mint leaves and leave the rest whole.
    3. You can adjust the sugar level depending on how sweet you want your lemonade to be.
