The delicious crunch, perfect sweetness and inner fluffiness of these loaded sweet potato fries are just mouthwatering. Pile on some extras like crispy onions, spiced cuttlefish pieces, kpakposhito sauce and some spring onions for an extra pop of colour and your taste buds will thank you. You will forget about your regular loaded fries.
These loaded sweet potato fries are amazing but for a healthier option, you could also fry them in an air fryer. I have an old Tefal ActiFry and what I typically do is cut the sweet potatoes into long strips, add a little bit of oil and salt and leave that to fry about 20-25 minutes and it's just as good. Generally, if you cut your sweet potatoes into thin strips, they turn out crispier. Also, it helps when the frying pan is not overcrowded and the oil is hot.
There is a wide variety of sweet potatoes available. Some are stringy, others fleshy and everything in between. The ones used for this recipe have a light yellow flesh and are well suited for frying. The green sauce is a mix of blended kpakposhito (Pettie belle), onions, shrimp paste, salt and then fried in oil.
For these loaded fries, you can pack on whatever you love. The possibilities are endless: crispy chicken skin, one-man thousand, onions, salsa. Over here in Ghana, sweet potatoes are usually eaten fried or used for mportomportor. They can also be boiled in salt water and eaten with stew.
Loaded Sweet Potato Fries
Ingredients
- sweet potatoes
- 1 large bowl of water with the juice of one lemon
- vegetable oil for frying
- 2 tbsp cuttlefish diced, spiced and fried
- 2 tbsp crispy fried onions
- 300 grams kpakposhito ( green Pettie belle)
- 2 tbsp shrimp paste
- 1 large onion
Instructions
- Blend kpakposhito with onions.
- Heat a pan with vegetable oil and pour the mixture into the hot oil.
- Add shrimp paste, salt and cook for 20 minutes.
- Peel the skin off the sweet potatoes and immediately place in the bowl of water with the lemon juice.
- Cut sweet potatoes into long fries and place them back into the water.
- Once all the fries are cut take out of the lemon water and place in lightly salted water.
- Pat the cut sweet potatoes dry.
- Fry in hot vegetable oil making sure not to overcrowd the pan.
- Drain and arrange on a plate.
- Sprinkle crispy onions, cuttlefish, and sliced spring onions over the fries.
- Finally, pour some of the green pepper sauce over the fries and serve immediately.
