Loaded Sweet Potato Fries

These amazing loaded sweet potatoes are topped with a spicy sauce, fried cuttlefish and some crispy onions.

Ingredients

  • sweet potatoes
  • 1 large bowl of water with the juice of one lemon
  • vegetable oil  for frying
  • 2 tbsp cuttlefish diced, spiced and fried
  • 2 tbsp crispy fried onions
  • 300 grams kpakposhito ( green Pettie belle)
  • 2 tbsp shrimp paste
  • 1 large onion

Instructions

  • Blend kpakposhito with onions.
  • Heat a pan with vegetable oil and pour the mixture into the hot oil.
  • Add shrimp paste, salt and cook for 20 minutes. 
  • Peel the skin off the sweet potatoes and immediately place in the bowl of water with the lemon juice.
  • Cut sweet potatoes into long fries and place them back into the water.
  • Once all the fries are cut take out of the lemon water and place in lightly salted water.
  • Pat the cut sweet potatoes dry.
  • Fry in hot vegetable oil making sure not to overcrowd the pan.
  • Drain and arrange on a plate.
  • Sprinkle crispy onions, cuttlefish, and sliced spring onions over the fries. 
  • Finally, pour some of the green pepper sauce over the fries and serve immediately.

Notes

1.The kpakposhito sauce does not keep well when stored outside as it contains shrimp and is not fried dry. You can however keep it in the fridge for a couple of days.
