Watermelon Mojito
A lovely version of the classic mojito using watermelons and lemon juice

- ½ large watermelon about 1 liter in juice
- 3 shots light rum
- mint simple syrup to taste
- 6 fresh mint sprigs
- 300 grams sugar
- 3 large lemons
- 300 miliitres soda water or sparkling water
Prepare a simple syrup by mixing sugar with an equal amount of water. Add the 3 of the mint sprigs and leave to simmer for about 10 minutes.
Cut watermelon into chunks and then juice the watermelon by passing the chunks through a sieve.
Cut the lemons into halves, squeeze and then add the juice to the watermelon juice.
Add the rum and the soda water and some crushed or muddled mint leaves. (from about 2 sprigs).
Add some of the simple syrup and taste. See notes 1.
Garnish with mint leaves and lemon wedges.
- Because your watermelons can either be very sweet or just barely sweet, the simple syrup has to be added to taste. The sweeter your watermelon is, the less syrup you will need. In that case, add some more mint leaves to the final mojito.
