Fresh, healthy, and with no sugar added, this pineapple juice with mint is the perfect refreshing drink on a hot day. The health benefits of pineapples are many, they are full of nutrients, a good source of Vitamin C and fiber, and immune-boosting. If you have loads of pineapples to spare then a pineapple ginger jam is heaven on earth. You can also use them in smoothies or simply chop them up and eat them.

Over here, pineapples are available pretty much all year round, and typically when asking for pineapple juice on a menu, you're most likely to get pineapple juice with a hint (unfortunately sometimes, a truckload) of ginger. While that is very tasty, adding mint to pineapples is also a wonderful blend.
Another fantastic pineapple recipe to try is this pineapple, sugarcane and tangerine juice. Ingredients
You just need two. Pineapples and some mint. Mint can sometimes give off a very toothpaste-like flavour and therefore I like to keep the mint at a tolerable and sensible level.
The simplest way to pick out pineapples is by smell, you should be looking out for a sweet smell. You can of course look at the colour of the fruit and if it is turning yellowish then that is a good way to tell that your pineapples are ripe or getting ripe.
However, you will find pineapples that are rather green but will be very sweet. Personally, I do not like pineapples that have turned completely golden-yellow as I find them to be overly ripe. The pineapples in the photo below were extremely sweet and did not need any sweetener.

Peel the pineapples and then cut them into large chunks. Wash the mint sprigs.

Put the pineapples with the mint and some water into a blender.

Blend until smooth or fine.

Pass the puree through a fine-mesh sieve and into a pitcher or a bottle.
Variations
- Ginger - a fairly common addition to pineapple juice and will make it taste even better. My tip is to keep in moderation and not to let it completely take over the goodness of the pineapple.
- Lemon juice- especially when your pineapples are very sweet, a touch of lemon juice adds a lovely contrast to the sweetness.

Tip
A shot of rum is great with this pineapple and mint juice. Obviously for adults only.

Fresh Pineapple Mint & Juice
Ingredients
- 2 large pineapples
- 2 fresh mint sprigs
Instructions
- Peel the pineapples and then cut them into chunks.
- Place the pineapple chunks and the mint in a blender and blend until smooth. Add some water to make blending easier.
- Pass the purée through a sieve or a strainer and pour it into a pitcher or bottle for storing.
- Serve chilled or with ice cubes.
Notes
- If you don't add water your pineapple juice is most likely to be very thick. The water, therefore, does not only help in making blending easier but also helps thin out the juice.
- If you are unlucky and your pineapples are sourer than they are sweet, you may want to add a sweetener like honey to make it easier to drink.
