Ingredients
You can make hot cocoa using just regular cocoa powder and some milk and sugar and be content or you can level up and make this Baileys Hot Chocolate using a blend of cinnamon, chocolate bars, cocoa powder, milk, a bit of coffee, salt, and some Baileys.
Baileys is a liqueur with a creamy profile, therefore if you don't drink alcohol for religious or other reasons, then you can easily leave it out and your hot chocolate will still have an amazing taste.
As the chocolate is already sweet, the addition of unsweetened cocoa powder balances the final drink perfectly. This drink is really just everything you want to be sipping on, on a cold night.
Instructions
Add a cinnamon stick to the milk and heat. Keep your eye on the milk as it can easily overflow once it starts boiling. Once it starts boiling, add the cocoa powder, vanilla powder, coffee, and a pinch of salt.
Add the chocolate bar to the milk and leave it to completely melt. Once melted, turn off the heat and add Baileys. That is all there is to this incredibly creamy and indulgent hot chocolate drink.
Substitutions
- Milk Alternatives - you can use any non-dairy milk that you prefer for this hot chocolate if you are lactose intolerant or you just don't drink milk. Baileys, however contains some milk so you may have to completely remove that. This hot chocolate will still taste good without it.
Variations
- Star Anise or Cloves - if cinnamon isn't your cup of tea (or hot chocolate) then you can also use star anise or cloves to get an equally warm and indulgent end result. As long as the spices are not too overpowering, you will love the end result.
Tip
Watch the milk carefully as it begins to boil. It can go quickly from barely simmering to quickly overboiling.
Baileys Hot Chocolate
Ingredients
- 1 chocolate bar approx 100 grams
- 2 teaspoons cocoa powder unsweetened
- 1 cinnamon stick
- 600 millilitres milk
- ½ teaspoon vanilla
- 1 teaspoon instant coffee
- pinch salt
- 3 shots Baileys
Instructions
- Place the cinnamon and the milk into a pot and bring to a boil.
- Reduce the heat to a simmer.
- Add vanilla powder, coffee, cocoa powder to the pot with the milk.
- Add the chocolate bar to the milk and make sure it has melted completely and mixed well with the milk before taking it off the heat.
- Add Baileys to the hot chocolate and pour into cups or glasses.
- Serve hot or warm.

- This recipe does not require any additional sugar as the chocolate bar is sweet enough.
- The coffee used in this recipe is instant decaffeinated coffee but you can also use freshly brewed coffee or instant regular coffee.
