This brown rice breakfast porridge is made from milled local unpolished brown rice and is simple to prepare. After rotating your standard breakfast options, it's probably a good time to try something new. This porridge can be made with water only or with milk, and this is really just a matter of preference. If you have made it entirely with water then you can add some milk once you are ready to eat.
When milled and cooked, the brown rice flour gives off a somewhat purple hue which is rather fascinating to see.

You can pep up this brown rice breakfast porridge by adding fruit, nuts, or just basically anything that you would usually put in your morning porridge. If you aren't a fan of porridge but you love breakfast then this savoury french toast or these simple pancakes are fantastic to try.

If you are feeling adventurous, you could also use the whole brown rice grains to make this porridge, similar to the rice water (a porridge made from broken white rice) we eat here in Ghana. You may need to soak the brown rice in water overnight to speed up the cooking process. This porridge however is very tasty and a nice switch from the regular.
Brown Rice Breakfast Porridge
Ingredients
- 2 tbsp brown rice flour
- 400 ml water or milk
Instructions
- Mix rice flour with water and bring to a simmer.
- Let simmer for about 10 minutes until thickened.
- Add milk, cinnamon sugar, crushed groundnuts, bananas or any other fruit of your choice as extras.
- Serve warm.
Notes
- Instead of using water to make this porridge, you can also use either just use milk (this includes plant-based milk) or a mixture of milk and water.
- If you find the consistency of this porridge too thick, you can add water or milk to thin it out.
- This porridge is also delicious with added cinnamon or vanilla.
