This chopped salad with chicken strips recipe is an easy one. Gather all the greens or veggies you have, chop them up, add some breaded chicken strips and that's your chopped salad ready. In this recipe, a mix of dandelion leaves, lettuce, red cabbage, white cabbage, carrots, and cucumber is used - a beautiful kaleidoscope of all things healthy. This salad is great to eat when you don't want to have anything heavy for lunch or dinner and you can leave out the chicken strips if you are vegetarian or vegan.

The only bit of effort here is the chicken strips, but if you have seen my chicken schnitzel post, then that is basically the same step to get the chicken ready for this chopped salad, except this time you will be using chicken strips.

This is a simple chopped salad recipe and should be ready in no time. As the choice of dressing, you can either go with the honey-mustard vinaigrette in my simple salad recipe or you can go with your favourite salad dressing.

Chopped Salad with Chicken
Ingredients
- 12 chicken strips
- 1 tbsp black peppercorns crushed
- tsp white pepper
- 1 tsp paprika
- salt
- 1 egg beaten
- flour
- breadcrumbs
- vegetable oil
- ¼ red cabbage small
- ¼ white cabbage small
- 1 small lettuce head
- 1 small cucumber
- 1 carrot
- 4 large dandelion leaves
Instructions
- Season chicken strips with white pepper, salt, and black pepper.
- Season flour with salt and paprika.
- Dredge chicken strips in flour, egg, and then breadcrumbs in that order.
- Fry for about 3 minutes and until golden brown. Leave to cool for a few minutes.
- Chop (or shred) all vegetables and mix into a bowl.
- Add chicken strips to salad and add a dressing of your choice.
