    Delicious Egg Salad

    Who doesn't love a good egg salad with bacon, peas, and parsley? The eggs are hard-boiled, chopped into pieces, and mixed with smoked paprika, black pepper, and of course mayonnaise.

    This egg salad is quick to make and is not at all complicated. Too bad we can't have them as often as we like. (Looking at you - egg prices!)

    Ingredients

    Because egg salads can feel rather rich, the peas and parsley bring a lovely freshness to the salad. The peas used in this recipe are frozen peas and simply pouring boiling water over them and letting that sit for about 5 minutes is enough to make them salad ready.

    The vinegar from the onions also cuts nicely through the fat of the mayonnaise. The bacon adds a nice saltiness as well as some texture.

    Ingredients for egg salad: peas, eggs, garlic chives, parsley, bacon, mayonnaise, paprika and black pepper.

    Instructions

    Boil the eggs, peel them, and set them aside.

    In a pan, fry the bacon until crispy and then chop them into smaller bits. Chop the onions and soak them in vinegar.

    Once the eggs are cool, chop them into smaller bits using a knife. In a large bowl add the chopped eggs, peas, parsley, garlic chives, mustard, chopped bacon, smoked paprika powder, black pepper, and of course the mayonnaise. Mix everything and adjust the taste as necessary.

    And that is all you have to do for a delicious egg salad! Great on its own but even better in a sandwich.

    Substitutions & Variations

    • Cucumbers - you can add some chopped cucumber to this egg salad. However, do be aware that cucumbers have high water content and so your egg salad can turn watery. A great tip is to mix in the cucumbers just before serving.
    • Pickled onions - add these to your egg salad in place or regular onions for an extra tang.
    • Non-pork bacon - if you do not eat pork, try turkey bacon or any other available bacon alternative.
    • Fresh peas - if you cannot get frozen peas, fresh peas are a good alternative.

    Storage

    Make sure to keep your egg salad cold so that it doesn't go bad. If you're serving this on a hot day, keep the bowl in an ice bath. Refrigerated, don't keep your egg salad longer than 3 days. These generally do not freeze well so consume as quickly as possible.

    What can I eat egg salad with?

    Egg salads are great on their own but they are even better in a sandwich. Whether sourdough, tea bread, or a bagel, the egg salad + bread combination is fantastic.

    Why is my egg salad watery?

    Typically, ingredients like cucumbers or tomatoes which have a high water content can lead to your egg salad being watery if you add them. A quick fix is to either omit them from your recipe or add them just before you're about to serve.

    How do I cut eggs for an egg salad?

    Cut the boiled eggs into quarters and chop with a knife until you get the desired size you're looking for.

    Ingredients

    • 8 eggs
    • 2 bacon rashers
    • ½ medium onion finely chopped
    • 1 teaspoon smoked paprika powder to taste
    • black pepper to taste
    • 3 tablespoons mayonnaise heaped
    • ½ teaspoon mustard
    • 1 teaspoon fresh garlic chives chopped
    • 1 tablespoon fresh parsley chopped
    • 2 tablespoons green peas frozen
    • salt to taste
    • 2 tablespoons vinegar

    Instructions

    • Place the 8 eggs in a pot and add some tap water to cover the eggs. Once the water has come to a boil, leave the eggs to cook for about 8- 10 minutes and then turn off the heat. Discard the boiling water and pour cold water into the pot with eggs. See note 1.
    • Peel the eggs and chop them into smaller bits with a knife and set aside.
    • In a pan, fry the bacon until crisp. Leave to cool and chop into smaller bits.
    • Pour the vinegar over the chopped onions and leave for 5 minutes.
    • In a large bowl, add the eggs, bacon and onions, peas, parsley, paprika powder as well as the mayonnaise. Add the vinegar from the onions as well.
    • Taste and adjust as necessary for salt and other seasoning and store covered in the fridge until ready to eat.

    1. There are a ton of different methods on how to cook the perfect hard boiled egg. I let the water come to a boil and then let that continue boil for 8-10 minutes. It has never failed me. Use whatever method works for you.
