    Colourful Fonio Salad

    The great thing about Fonio is that you can do so much with it. You can either use the flour or the cereal (grain) and still come up with fantastic results. In this colorful salad fonio recipe, shapes and colours come together for this healthy salad which is vegetarian but also vegan. Fonio flour has been used to make a simple side in this steamed fonio recipe.

    There are several recipes on how to cook fonio and this one is an easy one  and worth attempting. It is not difficult to mess up. For folks who have health issues with gluten, you will be happy to learn that fonio is gluten-free.

    This mixed salad is just lovely to look at. It is a lovely mix of seeds, vegetables, grains, and some fruit by way of papaya (or pawpaw). Unripe or half-ripe papaya has a texture that I absolutely love. It's firm and not mushy at all, unlike its very ripe counterpart. The sunflower seeds and agushi seeds lend this salad an incredible nutty flavour, some crunch, and also add a bit of protein.

    Colourful Fonio Salad Recipe

    A tasty and visually appealing salad made with Fonio

    Ingredients

    • 60 grams fonio
    • 200 ml water
    • ½ large cucumber
    • 1 small green pepper, bell pepper
    • 1 cob sweet corn
    • 1 medium half-ripe papaya
    • vinegar
    • 1 small red onion1
    • 1 stalk thyme
    • salt
    • garlic powder
    • 1 tbsp caramelised onions
    • black pepper
    • white pepper
    • tomatoes cherry or regular
    • garlic chives
    • spring onions
    • 1 tbsp agushi seeds
    • 1 tbsp sunflower seeds

    Instructions

    • Boil water with thyme, garlic powder, and a pinch of salt.
    • Add fonio, reduce heat and cook for about 10 minutes. Fluff and leave to cool.
    • Boil sweet corn and leave it to cool.
    • Toast seeds separately for about 2 minutes each and set aside.
    • Cut off kernels from the sweet corn.
    • Add the onions and papaya into a bowl filled with vinegar for 5 minutes and then remove.
    • In a bowl, add fonio first making sure to fluff and break apart any bits which may have clumped together.
    • Add all ingredients to the fonio and mix thoroughly.
    • Add black pepper, white pepper, oil, salt, and some garlic powder to finish seasoning the salad.

    Notes

    1. You will know the fonio is cooked when the grains are soft and there is no hardness felt. This should take about 10 minutes.
    2. You can add your choice of protein (steak, shrimp, boiled eggs) to this salad.
    3. This salad does not necessarily need a dressing. Should you wish to do that however, that is fine.
