    Arugula Salad with Pomegranate Seeds and Chopped Walnuts

    In all things salad nothing makes me happier than arugula salad. Whether you call it rocket or rucola, it is basically the same peppery and nutty green that is used in this salad. For this very simple salad, simply add some chopped walnuts, pomegranate seeds, and some shaved parmesan and toss those in a dressing made with balsamic vinegar, olive oil, and finely grated parmesan.

    Ingredients

    The ingredients for this salad are kept at a minimum but still produce an incredible end result.

    Ingredients for Arugula, walnut and pomegranate salad.
    • fresh arugula/rocket/rucola - get rid of any leaves that are turning yellow, these aren't good to eat. Also, make sure to thoroughly wash and dry the arugula to prevent a soggy salad.
    • chopped walnuts - these are a nice addition to the already nutty taste of the arugula and also add crunch to the salad
    • pomegranate seeds - these add a lovely hint of sweetness, crunch as well as colour.
    • parmesan cheese - grated and added to the dressing, the cheese adds fantastic flavour.
    • balsamic and olive oil - form the base for the salad dressing.

    In a bowl add the balsamic vinegar and olive oil.

    Add the grated parmesan to the bowl. Add some black pepper and salt as well.

    Mix with a spoon until the mixture has a smooth consistency.

    Add the washed and dried arugula to the dressing in the bowl and toss several times.

    Add the pomegranate seeds and the chopped walnuts and toss again.

    Add the parmesan shavings on top and serve.

    Substitutions & Variations

    • Other nuts - you can substitute walnuts with cashew nuts or toasted agushi seeds.
    • Mixed leaves - if you find arugula or rucola a bit too sharp in taste, you can use mixed leaves for this.

    Storage

    Prepare this salad once you're ready to serve. Making this salad ahead of time with the dressing will leave it soggy.

    Tip

    • Prepare all the ingredients ahead of time and mix together once you're ready to serve.
    • If you don't have a salad spinner, after you wash the leaves, place them between paper towels to soak up any excess water. You can also use a (clean) kitchen napkin or kitchen towel.

    A simple yet versatile arugula salad featuring chopped walnuts and an extra sweetness and crunch from pomegranate seeds. This salad is beautifully rounded off with a balsamic-olive-oil-parmesan dressing.

    Ingredients

    • 150 grams fresh arugula
    • 1 tablespoon finely grated parmesan cheese
    • parmesan shavings
    • 1 tablespoon olive oil
    • 2 tablespoons balsamic vinegar
    • 2 tablespoons pomegranate seeds
    • 2 tablespoons chopped walnuts
    • pinch salt See note 1
    • freshly ground black pepper to taste

    Instructions

    • Wash the arugula in water, dry properly, and set aside.
    • Add the balsamic vinegar and olive oil to a large bowl.
    • Add the grated parmesan, some black pepper, salt and mix to a smooth consistency. Taste and adjust accordingly.
    • Add the dry arugula to the bowl and toss.
    • Add the pomegranate seeds and chopped walnuts and toss some more.
    • Finally add the parmesan shavings and serve immediately.

    Notes

    1. Parmesan cheese is already salty so taste and adjust accordingly.
