Enjoy these juicy and mouthwatering chicken smash burgers, topped with cheese, pickled carrots and crispy onions between two fresh and soft buns. These burgers are incredibly simple to make and are a joy to eat!

Ingredients
- chicken - for these chicken burgers I used a 1:1 ratio of chicken breast to chicken thighs. Chicken breast can turn out very dry if you overcook them, however, mixing them with chicken thighs make for very flavourful patties and an amazing burger.
- lettuce - this one is standard for a burger. You can leave this out and add other toppings of your choice. See substitutions and variations for some options.
- burger sauce - this sauce is nothing fancy and is just a mixture of your regular ketchup, mayonnaise and a bit of mustard.
- mixed spices - this a blend of thyme, grated onions, garlic powder, salt, smoked paprika, mixed peppercorns and a pinch of fenugreek.
- burger buns - with or without sesame seeds, the most important thing is that they're fresh.
- crispy onion rings - for the burger toppings, I use this recipe to make onion ring as well as
- pickled carrots - these add a lovely acid touch to the entire dish.
Instructions
For these incredible burgers a mix of chicken breast and thighs were chopped finely.
Add all spices and salt to the chicken and mix thoroughly.
Form into balls and then flatten.
Place the patties on a tray lined with baking paper and refrigerate for about 15 minutes.
In a pan with oil and over medium heat add the patties.
Using baking paper and a flat round object, smash the burger into the pan.
Flip the patties when brown.
Place the cheese slices on top and leave them to melt.
Toast the buns and put some of the burger sauce on one half of the bun.
Add some fresh lettuce and then two of the patties.
Put some of the pickled carrots on top.
Add the crispy onions on top.
Substitutions & Variations
- Spicy - these patties taste even better if you had some spice to the patties. If you have some chilli powder, then that will do the trick.
- Coleslaw - instead of lettuce and carrots, you can make a finely shredded cabbage and carrot slaw. But ditch the creamy dressing and lightly toss the slaw in a vinaigrette of your choice for that acidic element.
- Pickles - these are a standard and great addition to any burger.
Storage
You can store the cooked chicken patties in the freezer and then assemble the burgers once the patties have been thawed and heated gently. Be careful to not overcook the burger patties.
Tips
- A great tip is to use a cast iron pan if you have it to get a beautiful brown sear on the chicken patties.

Easy Homemade Smash Chicken Burgers Recipe
Ingredients
- 1 kilogramm chicken minced or chopped finely, see note 1
- 5 burger buns
- 10 cheese slices
- crispy onion rings for topping
- 1 small onion blended
- salt to taste
Mixed Spices
- 2 teaspoons black, white and red peppercorns mixed
- 1 teaspoon smoked paprika powder
- ½ teaspoon garlic powder
- ½ teaspoon chili powder
- ¼ fenugreek
- 2 teaspoons dried thyme
Burger Sauce
- 2 tablespoons ketchup
- 2 tablespoons mayonnaise
- ½ teaspoon mustard
- a pinch black pepper
Instructions
- Combine all the spices and grind in a coffee grinder.
- Add the spices to the chicken and mix just until the ingredients are combined.
- Wet your hands and form about 10 equal balls from the mixture.
- Flatten the balls slightly and place them on a baking tray lined with baking paper.
- Place in the fridge or freezer for a few minutes. About 15 minutes in the fridge or 5 in the freezer.
- In a large pan with some vegetable oil and over medium heat, place one of the patties in the hot pan. Place a small square of baking paper on top of the patty and use a round wide object to flatten or smash the patty. Cook for about 3 minutes.
- Flip the patty over when it has some colour and then place a slice of cheese on the browned cooked side. Cook for another 2-3 minutes. Repeat for all patties and set aside.
- Toast the buns and spread some of the burger sauce on one half of the bun.
- Add the lettuce, two of the patties, the pickled carrots, and then the crispy onions on top.
- Place the other half of the burger bun. Serve with fries and the rest of the onions rings.

Notes
- For theses smashed burger patties, a mix of chicken thighs and breast was used in a ratio of 1:1. The chicken bits were cut into pieces and then chopped further with a very sharp knife.

This is the best chicken burger recipe I’ve found yet. Love the way the edges get caramelized from smashing them in the pan. I used large can of whole tomatoes bottom wrapped in foil to smash the burgers.
The seasoning is perfect. I didn’t do the onions but it was still great.
