    Ingredients

    Ingredients for smashed chicken burgers.
    • chicken - for these chicken burgers I used a 1:1 ratio of chicken breast to chicken thighs. Chicken breast can turn out very dry if you overcook them, however, mixing them with chicken thighs make for very flavourful patties and an amazing burger.
    • lettuce - this one is standard for a burger. You can leave this out and add other toppings of your choice. See substitutions and variations for some options.
    • burger sauce - this sauce is nothing fancy and is just a mixture of your regular ketchup, mayonnaise and a bit of mustard.
    • mixed spices - this a blend of thyme, grated onions, garlic powder, salt, smoked paprika, mixed peppercorns and a pinch of fenugreek.
    • burger buns - with or without sesame seeds, the most important thing is that they're fresh.
    • crispy onion rings - for the burger toppings, I use this recipe to make onion ring as well as
    • pickled carrots - these add a lovely acid touch to the entire dish.

    Instructions

For these incredible burgers a mix of chicken breast and thighs were chopped finely.

A green bowl of finely chopped thighs and breast.

Add all spices and salt to the chicken and mix thoroughly.

One chicken patty formed into a ball

Form into balls and then flatten.

Six chicken burger patties on white baking paper.

Place the patties on a tray lined with baking paper and refrigerate for about 15 minutes.

2 chicken patties in a frying pan with baking paper on one patty.

In a pan with oil and over medium heat add the patties.

2 chicken patties in a frying pan with baking paper on one patty being smashed.

Using baking paper and a flat round object, smash the burger into the pan.

Smash burger patties frying in a pan.

    Flip the patties when brown.

Melted cheese on chicken burger patties in a pan.

Place the cheese slices on top and leave them to melt.

Burger sauce on a toasted burger bun.

Toast the buns and put some of the burger sauce on one half of the bun.

Chicken burger patty with melted cheese on top.

Add some fresh lettuce and then two of the patties.

Pickled carrots on a chicken burger.

Put some of the pickled carrots on top.

Onions rings on a open burger.

Add the crispy onions on top.

An open smashed chicken burger with crispy onion rings on top, followed by pickled carrots, burger patties, lettuce, and burger sauce.

    Substitutions & Variations

    • Spicy - these patties taste even better if you had some spice to the patties. If you have some chilli powder, then that will do the trick.
    • Coleslaw - instead of lettuce and carrots, you can make a finely shredded cabbage and carrot slaw. But ditch the creamy dressing and lightly toss the slaw in a vinaigrette of your choice for that acidic element.
    • Pickles - these are a standard and great addition to any burger.

    Storage

You can store the cooked chicken patties in the freezer and then assemble the burgers once the patties have been thawed and heated gently. Be careful to not overcook the burger patties.

    Tips

    • A great tip is to use a cast iron pan if you have it to get a beautiful brown sear on the chicken patties.

    FAQ

What is a chicken burger made from?

If you want to be very technical, a chicken burger is a chicken patty in a bun that is made from ground or minced or finely diced chicken. Any other chicken-in-a-bun is a chicken sandwich.

What are some great toppings for a chicken burger?

You can top your chicken burger with different things. Some popular ones are pickles, coleslaw, crunchy onions, tomatoes, crisp lettuce and many others.

I don't eat eggs, can I still make homemade chicken burgers?

Yes you can still make chicken burgers even if you don't eat eggs. This recipe does not use any eggs or binders.

How long should I cook my burgers for?

This depends on how thick your burgers are. If they are smash burgers they will need less time to cook as compared to thicker burgers. If you are not certain whether your burgers are cooked, use a thermometer.

    What makes a burger great?

A great burger is one that has a fresh tasty bun and good quality and well sesoned meat or chicken. The extras like a burger sauce, lettuce, tomatoes, pickles will only enhance an already great base.

    Notes

    1. For theses smashed burger patties, a mix of chicken thighs and breast was used in a ratio of 1:1. The chicken bits were cut into pieces  and then chopped further with a very sharp knife.

This is the best chicken burger recipe I’ve found yet. Love the way the edges get caramelized from smashing them in the pan. I used large can of whole tomatoes bottom wrapped in foil to smash the burgers.
The seasoning is perfect. I didn’t do the onions but it was still great.
      Highly recommend!😋
