    Creamy Tomato Sauce for Pasta

    A quick and uber delicious creamy tomato sauce with spaghetti. This sauce is a beautiful combination of lemon basil, black pepper, fresh tomatoes, cooking cream, and dried red chilli powder. Not too heavy on the cream and with some extra flavour by way of chicken broth, this dish is going to quickly become one of your favourite go-to creamy pasta meals. What you get is a velvety sauce that clings to the spaghetti without drowning in it.

    Add a protein of your choice like chicken or pork and that's an entire and very filling lunch or dinner option. Another great tomato-based sauce without cream is this flavourful meatballs in tomato sauce. Just like this one, it is also great with spaghetti or any other pasta of your choice.

    Ingredients

    This creamy tomato sauce doesn't require a whole range of ingredients which is also what makes it so appealing. The combination of chopped tomatoes and cooking cream give this sauce a very appealing orange colour. Chilli powder adds some kick to this and the chicken broth deepens the flavour.

    Ingredients for sauce: lemon basil, garlic, cooking cream, red chilli powder, tomatoes, garlic, chicken broth, black pepper, olive oil, spaghetti.

    Method

    The only ingredients, that need any extra work are chopping the garlic, onions and tomatoes. The better the quality of your tomatoes, the better your resulting sauce will taste. Chopping them finely is a great alternative to blending them but you can do either.

    Once all the onions, garlic and tomatoes are in the pan, add your broth or stock for some more flavour.

    The cream is then added along with all the spices and left to thicken. The spaghetti, which should not be all the way cooked (see recipe card), is also then added to the creamy tomato sauce and mixed well until the sauce clings to the pasta.

    Substitutions

    • Canned Tomatoes - If you do not have fresh tomaotes then canned tomatoes are a great alternative to use.
    • Heavy Cream - you can replace cooking cream with heavy cream but do be aware that heavy cream is a bit thicker in consistency than cooking cream and so you may want to use less of the heavy cream. However you can always thin it out with broth, stock or water.

    Tip

    If you have leftovers (very unlikely) and you have put them in the fridge, the following is a great way to heat them. Add a little water to a pan and make sure that the leftovers have come to room temperature. Let the water boil, add the leftovers and stir until warm. Heating the leftover food straight out of the fridge will take longer and your pasta may end up mushy.

    Creamy Tomato Sauce for Pasta Recipe

    A quick and flavourful creamy tomato sauce with spaghetti

    Ingredients

    • 2 cloves garlic chopped
    • ½ onion chopped
    • 3 medium tomatoes chopped
    • ¼ teaspoon red chilli powder
    • 1 tablespoon black peppercorns crushed
    • 120 millilitres cooking cream
    • 120 millilitres chicken broth
    • 2 tablespoons olive oil
    • salt
    • lemon basil

    Instructions

    • Cover a pan with some olive oil and fry onions and garlic in it.
    • Add tomatoes, red chilli powder, and black pepper and cook for about 2 minutes.
    • Add chicken broth and then simmer for a further 5 minutes until the sauce has reduced. Stir occasionally to prevent burning.
    • Add salt to taste and then add cooking cream, lemon basil, let simmer for about 4-5 minutes and then take pan off the stove.
    • Cook spaghetti according to instructions but about 1-2 minutes shy of recommended cooking time.
    • Add spaghetti to the pan with the sauce and add a small ladle of the pasta water.
    • Over low heat, stir to combine everything.
    • Serve hot with chopped parsley, grated cheese and a protein of choice.

    Notes

    1. When boiling the spaghetti or any other pasta, be sure not to cook for the entire cooking time as stated on the packaging. The pasta will continue cooking once in the sauce.
    2. If you find that your sauce is too thick, you can thin it out with stock, broth or water. Remember that you will also add some of the starchy pasta water to the sauce.
