You can never go wrong with a delicious BLT - Bacon, Lettuce, and Tomato sandwich. For my version of this very popular sandwich, the tomatoes are marinated briefly and also quick roasted garlic and mayo sauce is added. Incredible!

This BLT in a fresh croissant is great for breakfast but they are also a great lunch option. Another plus is that they are easy and quick to make. The fresh garlic in the marinated tomatoes is not work-pace friendly and nor is it everyone's cup of tea. Unless you're warding off vampires. I offer some alternatives in the Substitutions & Variations section.

Ingredients

- croissant - fresh croissants are one of the best inventions ever and used for a BLT even better.
- tomatoes - if you find flavourful tomatoes, then you're in luck and your sandwich will taste incredible. A way to get around boring tomatoes is to marinate them and then use them in this sandwich.
- bacon - fry them to your liking.
- lettuce - the choice is yours on what is readily available. These should however be fresh and crisp.
- roasted garlic - this an important ingredient for the garlic-mayo sauce.
Instructions
BLTs are quite easy to put together - get your croissants (or favourite bread) and layer all the ingredients.

This BLT has an additional roasted garlic-mayo sauce which is made by roasting a head of garlic until soft, squeezing it out into a bowl, and mixing it with mayonnaise, lemon juice, black pepper, parsley and some salt.

To assemble the BLT croissant sandwich, cut the croissant in half and then layer the lettuce and then the marinated tomatoes.

Add the fried bacon, and the roasted-garlic mayo sauce, and enjoy!

Substitutions & Variations
- Non-pork bacon - if you do not eat pork, find your favourite non-pork alternative and use that.
- Herb-marinated tomatoes - raw garlic is harsh and can be unpleasant. An alternative is to either totally omit the raw garlic or use roasted garlic.
- Yoghurt sauce - if you aren't a fan of mayonnaise, substitute it with yoghurt. Adjust according to taste as necessary

Tip
Croissants, especially when fresh can be quite delicate to handle and get squishy quickly. Use a serrated knife to cut the croissants and if they are fresh out of the oven, leave them to cool completely.

- 2 tablespoons mayonnaise
- 1 teaspoon lemon juice
- vegetable oil
- black pepper powder to taste
- 1 clove garlic chopped finely
- parsley chopped

- Add chopped parsley, 1 tablespoon of vegetable oil, chopped garlic and a good pinch of salt to the tomatoes in a bowl. See note 1.
Roasted Garlic Mayo Sauce
- Squeeze the head of a roasted garlic into a bowl. See note 2.
- Add mayonnaise, chopped parsley (about a teaspoon), black pepper, lemon juice and salt and mix thoroughly. Thin it out with vegetable oil. See note 2.
Assembling the BLT
- Cut each bacon rasher into two and fry the bacon in a pan until crispy. Set aside.
- Using a serrated knife, cut the croissant lengthwise.
- Place lettuce on the bottom half of the croissant.
- Remove the tomato slices from the marinade and place them on the lettuce.
- Add two bacon pieces on top of the tomatoes.
- Add the garlic-mayo sauce on top. (Alternatively, put some of the sauce on the bottom half of the croissant before assembling the sandwich).
- Add the top half of the croissant and enjoy!
Notes
- The salt will draw water from the tomatoes but they will be tastier. Simply shake off any excess liquid before assembling the sandwich. Leave to marinate for at least 10 minutes. Marinate the tomatoes first before you do anything else.
- Roast a head of garlic by cutting a thin layer off the top to expose the cloves. Add a few drops of oil and then roast in the oven until very soft.
- If you have olive oil you can use this, however any other neutral smelling vegetable oil is just as good. Depending on preference you can go for a lighter, runnier sauce.
