As a shrimp lover, you can never have enough of them. These beer-battered shrimp are crispy on the outside, the shrimp is cooked to perfection on the inside and just incredibly tasty. The beer batter is a mixture of well-seasoned flour whisked with cold pale beer.
By now you know that shrimp is one of my favourite things to eat - call them what you want, I'm eating them. Other shrimp recipes you will love are this tasty salad with shrimp and wagashi, these fiery shrimp or this okro soup with shrimp.

Ingredients
It is important to clean the shrimp properly, that is peel and devein them. For this recipe, I left the tail on so that I have something to hold on to while dipping them in the batter. If you can get deveined and peeled shrimp that reduces the amount of work you have to do significantly.
The rest of the ingredients are used for the beer batter: flour, corn starch, baking powder, garlic powder, onion powder, white pepper, black pepper, salt, red chilli powder, and a cold light beer.
Instructions
Mix the seasoning with the flour, corn starch, and baking powder thoroughly.
Pour the beer into the mix, whisk until well combined, and add salt to taste. If you decide to use ready-made seasoning, remember that some of these products contain salt already.
Once the batter is smooth, take the shrimp by the tail and dip it into the batter making sure that any excess batter drips back into the bowl containing the batter. Fry over medium heat for about 3-4 minutes or until shrimp is golden brown.
Substitutions
- Sparkling Water - whether due to religious reasons or other personal reasons, if you completely want to avoid using alcohol, you can use sparkling water to make your batter.
Variations
- Seafood/ Fish - if you have any other seafood or fish you can use the beer batter for these as well.
Tip
This recipe is rather forgiving. If you want a thicker batter, sprinkle a handful of flour into the mixture, whisk and then test fry to see if you are satisfied with the thickness of the batter. On the other hand, if you find that your batter is too thick, you can thin it out by adding some more beer. All you need to make sure of is that your seasoning is still right after you have made these adjustments.
Beer Battered Shrimp
Ingredients
- 100 grams all-purpose flour
- 250-300 grams shrimp
- ½ tablespoon baking powder
- ½ tablespoon corn starch
- salt to taste
- garlic powder
- onion powder
- red chilli pepper powder
- white pepper
- black pepper
- 180 mililitres pale beer approximately
Instructions
- Mix flour with baking powder and corn starch.
- Add seasoning and salt to the flour and mix well.
- Add the cold beer to the flour until smooth.
- Grab each shrimp by the tail and dip them into the batter, making sure that each shrimp is coated well.
- Fry the shrimp in vegetable oil until golden brown. This should take about 3-4 minutes.
- Drain on a paper towel to absorb any excess and serve immediately
- Serve with a dip.

Notes
- This recipe is easily adjustable if you realize that your batter is too thick or too thin. If it is too thin, simply sprinkle in some flour to thicken it, If it is too thick, add some of the beer to thin it out.
- It is always good to test one shrimp in the oil to see if you like the consistency. You can then adjust accordingly.
- These shrimp are crunchy fresh out of the oil but after a while they lose their crunch. They are therefore best eaten hot and fresh.
