    How to make Chicken Wraps

    Incredibly well-flavoured wraps that'll leave you wanting more. These chicken wraps contain grilled chicken drumsticks, crisp lettuce, bell peppers, onions and a light mayonnaise and yoghurt sauce. Toast them slightly in a pan, cut them in half and that's all done!

    The fun bit about chicken wraps is that they don't need too much effort and are ready in no time at all. If you have leftover chicken from the previous day, you can easily shred that and use it for your wrap. Whether for lunch or breakfast, they're just perfect!

    This recipe uses my oven-grilled herby chicken but you can also use this charcoal-grilled spatchcock chicken recipe.

    Ingredients

    You need only a few ingredients to make these tasty wraps and you can add and subtract as you want. The most important ingredient is the chicken.

    • tortilla wraps
    • chicken drumsticks
    • bell peppers
    • onions
    • shredded lettuce
    • cheese

    Instructions

    These are so incredibly easy to make. First, fry your bell peppers and onions in a bit of oil and then add some salt and paprika. Next, take your favourite sauce and add a dollop to a tortilla and spread it out a bit. For a full recipe for a quick mayonnaise and yoghurt sauce, see the recipe card for full instructions. If you don't like this quick sauce then this chicken slider sauce is just as fantastic or the incredible one used in this beer-battered and panko crusted wagashi sandwich.

    Shred the chicken drumsticks into smaller bits. Assemble the wrap by layering the shredded or flaked chicken, then the bell peppers and onion, the lettuce, the cheese and some more sauce.

    Fold the tortilla and then roll it tightly. You do not have to roll them like this and if you have a personal favourite way of wrapping your tortillas, go for it!

    Toast the wraps in a pan to seal the ends and to get some of that cheese to melt and be all gooey.

    Slice the wraps into two and enjoy!

    Substitutions & Variations

    • Avocado - add some sliced avocado or even avocado cream to this wrap.
    • Sliced cucumbers - for an extra crunch and freshness add some cucumbers.
    • Pickled onions - these add a nice tart touch to these fantastic wraps.
    • Tomatoes - some delicious chopped tomatoes are a fantastic addition to these wraps.

    Tips

    • If your tortillas get a bit dry from being left out in the open, simply pop them in the microwave for about 10 seconds to soften them. This will make wrapping much easier.
    • If rolling the tortillas is a huge pain, do what you can and close off the opening with a toothpick
    • Toasting the wraps is not a must, especially since the fresh lettuce may wilt. Keep it fresh and crunchy by not toasting!

    Ingredients

    • 4 small tortilla wraps
    • 1 small bell pepper sliced thinly
    • ½ medium onion sliced thinly
    • cheese grated
    • 1 handful lettuce sliced or shredded
    • 2 medium grilled chicken drumsticks

    Quick Sauce for Wrap

    • 1 tablespoon mayonnaise
    • 1 tablespoon yoghurt
    • herbs to taste
    • onion powder to taste
    • garlic powder to taste
    • paprika powder to taste
    • salt to taste
    • 1 teaspoon lime juice

    Instructions

    • Fry the onions and bell peppers with about a tablespoon of vegetable oil along with some salt, black pepper, and paprika. Set aside.
    • Using a fork, shred the chicken drumsticks and set aside.
    • Spread some of your favourite sauce or the quick sauce on each of the tortillas.
    • Add the chicken, the bell pepper-onion, lettuce, cheese, and then more of the sauce.
    • Fold and then wrap the tortillas to close them. Lay them down on the seam side.
    • In a pan, lightly toast the wraps, especially the seam side to close it.
    • Cut each wrap into half and serve.
