A refreshing and filling salad that is easily put together in under 10 minutes. This cucumber, tomato, and avocado salad has no extra salad dressing or vinaigrette but is very delicious. If you love avocados then you know that a bit of black pepper and salt can significantly take the taste from great to amazing. Add some lemon juice and olive oil and you're good to go.

Ingredients
All you need for this salad are some tomatoes, avocado, cucumber, lemon juice, onions, olive oil, black pepper, and a pinch of salt.

Instructions
This salad is not only delicious but also very simple to make. Slice the onions and put the slices in some vinegar. I used red wine vinegar in this recipe but you can also use apple cider vinegar or whatever is available to you.

Cut the cucumber into large pieces or chunks. Depending on the type of cucumbers you are able to buy, you may have to remove the skin, the seeds, or both. Some cucumber types have skin that is a bit tough and not ideal to eat. These were best to eat without the skin.

Chop the tomatoes and the avocado into large pieces.

Add all the ingredients into a bowl and add the olive oil, lemon juice, black pepper, a pinch of salt and mix well.

Substitutions
- Onion powder - if you don't like raw onions in your salads then a good alternative is to use onion powder to season the salad
Variations
- Salsa - you can turn this salad into a salsa by chopping the ingredients much smaller. This is great with plantain chips!
- Herbs - add some parsley, coriander or chives for an even fresher taste.
Tip
If your tomatoes are very watery, and you plan on keeping the salad a bit longer in the fridge, then a great tip is to remove the seeds from the tomatoes before using that for the salad.

Cucumber Tomato Avocado Salad
Ingredients
- 1 medium cucumber cut into large chunks
- 3 medium tomatoes cut into large chunks
- 1 large avocado cut into large chunks
- ½ medium onion cut into slices
- black pepper to taste
- 2 tablespoons lemon juice approximately
- red wine vinegar
- salt to taste
- 1 tablespoon olive oil or any other vegetable oil
Instructions
- Soak the onions in the red wine vinegar for about 5 minutes.
- Mix the chunks of cucumber, tomatoes and avocado in a bowl.
- Add salt, black pepper, olive oil and lemon juice and mix.
- Take onions out of the vinegar and mix with the other vegetables.
- Taste and adjust if necessary.
- Serve cold or at room temperature.

Notes
- Depending on the type of cucumber you are able to get, you may be able to leave the skin on and the seeds in. If you are unsure which type you have, a simple taste test before you cut up the rest of the cucumber will solve that problem for you.
- This salad does not need a salad dressing. However, if you absolutely want one then this yoghurt dressing is a great choice.
- If you don't like raw onions, you can easily substitute them with some onion powder.
