    Smashed Potatoes

    I find leftover boiled potatoes so boring - you're not quite sure whether to heat them up in the oven or the microwave or steam them. So what to do? If simply reheating them is out of the question, then you can make these quick but tasty smashed potatoes. All you need is some sliced onions, black pepper, white pepper, and a bit of vegetable oil. As you fry them in the pan and you’re smashing them you will get a slight crust on some of the potatoes which are lovely for contrast.

    If you are using freshly boiled spuds, then let them cool or dry in the pot before making the recipe. A quick way to dry them is to drain the water after they are cooked. Then placing them back into the pot in which they were cooked back on the still warm burner. The remaining water on the potatoes will evaporate and dry them out. You can also make this recipe using yam. Take it up a notch by adding a whisked egg and pan-frying everything together. My mum made this yam and egg combination for my siblings and me to take to school as lunch.

    These smashed potatoes meant as a side can however also work as a main if paired with a nice salad or salsa. They also make a perfect pairing with this delicious lamb stew. The next time you're looking for something to make with potatoes, you should definitely try this. Especially if you dont want anything which involves roasting or mashing or boiling then this is a welcome change.

    Smashed Potatoes

    These smashed potatoes are a fantastic way to transform leftover boiled potatoes.

    Ingredients

    • leftover boiled potatoes
    • ½ medium onion sliced
    • 1 tbsp spring onions chopped
    • black pepper
    • white pepper
    • vegetable oil

    Instructions

    • Heat a frying pan with vegetable oil over medium heat and fry the sliced onions until they just begin to turn brown.
    • Add potatoes and smash while frying.
    • Use back of fish slice to press down the potatoes so that they get some colour.
    • Add black pepper, white pepper, and salt to taste.
    • Sprinkle spring onions over potatoes and give a good stir.
    • Serve warm with salsa or a simple salad or stew.
