Making a simple chocolate pudding should not be daunting. This recipe uses a few ingredients, including chocolate and cocoa powder made in Ghana to produce a light and deeply satisfying dessert. The great thing about desserts like these is that they can be made ahead if you are planning on having guests over.

Ingredients
The ingredients for this chocolate are pretty easy to get: some cocoa powder, chocolate, sugar, cornstarch, vanilla essence or powder, milk, a pinch of salt, and some butter. This particular recipe does not use egg yolks but there are many recipes out there that do if you're looking for that.

Instructions
This homemade chocolate pudding is rather simple to make. Pour the milk into a pot and then add the cocoa powder, sugar, and vanilla. For the cornstarch, you're better off dissolving it in a small amount of liquid before adding it to the contents of the pot. This ensures that you don't get any clumps of cornstarch in your final pudding.


Once the cornstarch mixture has been added, then break some pieces of the chocolate into the mixture and stir. Bring to a boil and leave to simmer, stirring occasionally. When the mixture is thick enough to coat the back of a spoon, you know it is ready.



Substitutions
- Dark Chocolate - instead of using milk chocolate, you can use dark chocolate (70%) if you prefer that darker richer taste.
Storage
This pudding can last in the fridge for up to 3 days without any problems.
Tip
Skin or no skin? If you are really fussy about your pudding getting a skin on them once it has cooled, then make sure to put some cling film or plastic wrap directly onto the pudding to prevent that. This goes generally for all puddings.

Chocolate Pudding Recipe
Ingredients
- 400 millilitres milk
- 2 tablespoons sugar approx 40 grams
- 2 teaspoons dark cocoa powder
- ¼ teaspoons vanilla powder or essence
- 3 teaspoons corn starch heaped
- salt pinch
- 4 squares chocolate approx 35 grams
- 10 grams butter
Instructions
- Pour milk into a saucepan.
- Add sugar, salt, vanilla powder, and cocoa powder and mix thoroughly.
- In a small bowl, take about 3 tablespoons of the mixture and mix it with the cornstarch until completely dissolved. Pour back into the saucepan.
- Add chocolate to the contents of the saucepan.
- Bring to a boil and then let simmer for 10 minutes or until thickened, stirring occasionally.
- Add butter to the saucepan and turn off the heat.

Notes
- If you do not want skin on your pudding then place some cling film or plastic wrap directly on the pudding.
- You can prepare this pudding ahead and leave it to chill overnight for the best results. The pudding will thicken as it chills.
- Make sure your pudding has visibly thickened while it is on the stove before taking it off to chill.
