Take a break from all things eggy and dairy laden and indulge in a healthy and tasty vegetarian option. You won't miss the kenkey, cold cuts, the white bread, cheese or anything else. Tofu, and this tofu scramble, in particular, does not have to be bland at all and the addition of white pepper, black pepper, bell peppers, spring onions and turmeric just blow this tofu out the waters. On one half of a slice of a loaf of whole wheat bread which I baked myself, you could almost mistake it for scrambled eggs. This was precisely the idea behind this recipe, to mimic them.
For our second half of the whole wheat bread, oyster mushrooms, seasoned with white pepper and salt are fried in very little oil for a few minutes and then piled on the bread. You won't believe how something so simple can be so flavoursome but hey, that is the magic of mushrooms. A cup of tea, tofu scramble and fried mushrooms on bread, and we are all set for the morning.
I have raved about tofu enough in my tofu stir-fry recipe and this a good source for making your own tofu and so there is no point repeating myself.

The tofu can easily be made into a scramble by breaking apart with your fingers. In addition to that, we get a rich yellow colour by adding some turmeric. The turmeric also adds a bold flavour to this tofu scramble whereas the bell peppers bring a slight sweetness and light crunch. It's beautiful to watch the off white colour of the scramble turn into bright yellow, just really amazing.

Seeing that tofu in itself can be dry especially if it's the firm type, we add a little moisture by way of almond milk (or any other non-dairy milk option) to get that tofu scramble soft. I would imagine that silken tofu would work pretty well with this recipe but this is just as good.

Fried mushrooms and Tofu scramble are a beautiful vegetarian or vegan option for breakfast and moreover, absolutely delicious. Also, they don't sit heavy in the stomach and make you sluggish as some breakfast options tend to do.

Tofu Scramble and Fried Mushrooms Duo
Ingredients
- 50 grams Tofu
- 1 tbsp spring onions chopped
- ½ small yellow bell peppers chopped
- 2 tbsp almond milk (soy milk, vegetable stock or any other liquid of choice)
- black pepper
- white pepper
- turmeric
- dawadawa optional
- 2 handfuls mushrooms
- ¼ medium onion sliced
- salt
Instructions
- Break the tofu apart with fingers until mixture resembles finely scrambled eggs.
- Add spring onions, bell peppers, black pepper, white pepper, salt, turmeric, and dawadawa.
- Add almond milk and over low to medium heat and fry the mixture for about 5 minutes.
- For the mushrooms, fry sliced onions in a pan and add mushrooms.
- Season with white pepper and salt and fry for 4 minutes.
